Roll out the second disk of pie crust and place it over the filling. Trim any excess dough and crimp the edges to seal the pie.
Dock the top of the pie crust to allow steam to escape during baking.
Optional: brush the top crust with beaten egg for a golden finish.
4. Bake and Enjoy:
Place the assembled pot pie on a baking sheet to catch any drips. Bake in the preheated oven for 40 - 55 minutes, or until the crust is golden brown and the filling is bubbling.

1/4 cup vegetable shortening
1/2 teaspoon salt
1/2 cup ice water
